Hollywood Brown Derby Adds Seven New Dishes at Disney's Hollywood Studios

The new restaurant lineup includes halibut, octopus, short rib, pork chop, filet, and two desserts.

The Hollywood Brown Derby added seven new dishes at Disney's Hollywood Studios, giving the Walt Disney World signature restaurant new seafood, pork, short rib, filet, and dessert options at lunch and dinner.

The new dishes are available on the restaurant's current Walt Disney World menus. Prices run from $14 for the new desserts to $56 for the filet.

New Hollywood Brown Derby Dishes and Prices

The new appetizer is Char-grilled Octopus with herb-roasted potatoes, chimichurri, and chipotle-harissa aioli for $20.

The new entrees are Pan-roasted Halibut with leek vichyssoise risotto, pea, and citrus for $54; Fried Pork Chop with yuzu beurre blanc and summer vegetables for $45; Braised Center-cut Short Rib with hominy puree, roasted vegetables, smoky adobo glaze, and beef jus for $54; and Filet Mignon with rhubarb-red wine demi-glace, Yukon gold potato, and braised endive for $56.

The dessert additions are Honey Pot de Creme with strawberry compote, salted streusel, and ginger sponge cake for $14, plus Vanilla-Fruit Cheesecake with peach sponge, strawberry panna cotta, streusel, strawberry-peach compote, mango coulis, and crunchy tuile for $14.

Disney Shares Official Brown Derby Photos

Disney shared official photos of the seven dishes through Disney Eats on June 28. The carousel gives a clearer look at the plating than the regular menu cards, especially the halibut, short rib, and two desserts.

The Hollywood Brown Derby remains one of the park's table-service anchors, with a menu built around seafood, steaks, chops, and Cobb salad. The new dishes fit that profile and add more choices for guests staying in the park for lunch or a late dinner.
